I have been down home for the past month with my parents and while they have to work I thought I would be a good kid (or a suck up) and cook dinner for them when I can. This is kind of rare for me, I like to say I am challenged in the "cooking" department. Give me instructions and I can follow, but to go though the fridge and just whip something up has always been hard for me. Before Byron and I relocated to the sunny state of Queensland I didn't really ever cook. Byron being a Chef I always felt nervous to cook for him, and pretty much left it up to him to feed me. But I would like to say in the 6 months that I have been away from the parentals I have been killing it in the kitchen.
The meal that won the Fam Bam over was Asparagus and Brie tart served with a Pumpkin, Feta and Spinach Salad. Sounds so freaking fancy but it was super easy. What is even more of a shock to my family and I was this meal had zero meat. We are huge meat eaters and to make a full meal where no meat was involved and to enjoy it is a huge plus for us. So I'll shut my pie hole now and give you the recipe for the tart
Asparagus & Brie Tart
1 sheet of frozen puff pastry, partially thawed 1 Egg 1 1/2 tablespoons of pure cream 2 teaspoons of Dijon mustard 2 bunches of asparagus, trimmed, and blanched 90g brie cheese Salt Pepper
1. Preheat oven to 220°c/200°c fan-forced, and line a baking tray with baking paper
2. Place pasty on lined tray. Using a small knife make a 2cm border around edge of pastry, kind of like your drawing the border on the pastry. DO NOT cut right through the pastry. Using a fork pierce centre of pastry 4 times. Bake for 6 mins or until puffed and starting to brown.
3. Whisk egg, cream and mustard in a small bowl. Season with salt
4. Remove pastry from oven. Time to be super careful and re-cut or maybe re-trace would be a better word along the border (do not cut right through ok people).Next you need to press down on the centre of the pastry. Place asparagus in a single layer, over pastry. Top with brie. Pour over egg mixture, and season with pepper. Bake for 9 mins or until pastry is golden and egg mixture is set. Pull that baby out of the oven serve with a salad.
